Peach Cobbler

I've been craving peach cobbler for about a gazzilion years and when I saw that my local farmers market had delectable peaches I had to make it. I found the recipe on Pintrest but I changed a few things up. So, ladies and gents, here is the best peach cobbler recipe of my life. 



Peach Cobbler

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 cups sugar, divided
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 cup milk
  • 5-6 fresh peaches, sliced
  • 1 tablespoon apple juice
  • 2 tablespoons vanilla, divided 
  • Ground cinnamon or nutmeg

Preparation

  1. Melt butter in a 13- x 9-inch baking dish, mix in 1 tablespoon vanilla.
  2. Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
  3. Bring remaining 1 cup sugar, peach slices, 3 tablespoons cinnamon, 2 tablespoons nutmeg, 1 tablespoon vanilla, and apple juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon and nutmeg, if desired.
  4. Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.


While I was making this I found it odd that the batter went under the peaches and that you weren't supposed to stir anything in the baking dish. I went along with that part of the recipe though and while baking the batter rises up and covers the peaches. The batter makes a very yummy crust that is fluffy and moist with an almost caramel like crunchy top. I love it so much. 
Ps. The original recipe called for lemon juice instead of apple but I didn't have any lemon juice.
